As I said in my previous post. I love to cook with a glass of wine in hand. I found that pretty cool Asian style meatball recipe on Pinterest (see link in previous post).
I ended up making my own extended/healthy version of it which then inspired me to create yet another board on Pinterest. On this new board, I am going to snap photos of the recipes I create/make and write the ingredients below the photo for future reference.
Alas, here is the meal:

Ginger scallion ground chicken meatballs with spicy brown rice. (healthy twist on Chinese food).
Meatballs: Chop fresh ginger, chop garlic and scallion. Then sauté in sesame oil. Add mixture to ground chicken (or any chop meat) with two eggs and breadcrumbs. Once lined up in baking dish (you can fry if you wish) coat meatballs in a sesame sweet teriyaki sauce. Baking time & temp depends on size of meatballs. I just watch and move them around for about 30-50 mins on 400. I don't measure ingredients either I just eyeball and add to taste.
Rice: Sauté onion, red pepper and bean sprouts in sesame oil. Add spicy stir fry mixture (pre-packaged spice packet) then add to cooked brown rice.
Key ingredients: Ginger and sesame oil!
No, seriously...sesame oil is VITAL.
Then for Mothers Day during cocktail hour(s) (yes, we love that) I brought these babies out as d'oeuvres:
While cold, cut into quarters with toothpicks.
Good for a get together or you can make them mini :)
